Carlos and Cyrus Noronha’s passion and expertise with brewing freshly roasted coffee has made them launch Latin Quarter

In the charming narrow lanes of Sao Tome-Fontainhas, amidst the colourful homes with lively exteriors and eclectic stores, one can grab an all-day breakfast or lunch or even an early dinner at Caravela Café and Bistro, all at very reasonable prices. Known predominantly for its succulent breakfast sausages and fresh fruit juices, Caravela Café and Bistro now has its very own coffee brand to its name.
Caravela Café and Bistro has completed almost 5 successful years of business as one of the highest-rated breakfast cafés in Goa, across all food apps and websites attracting Goans as well as tourists from all over the country and the world. Located in Sao Tomé, the café has now launched its own coffee brand ‘Latin Quarter’ in Goa along with the installation of a state-of-the-art coffee roaster for roasting green beans, grinding and packing its line of coffee in the premises of the café.

Latin Quarter coffee

Carlos and Cyrus have been running the place for four years now. The Cafe started in 2015. Initially only serving breakfast, soups, and sandwiches. It slowly expanded to include salads, pasta, and pizzas. They now have 7 types of coffees (including Latin Quarter) which their customers can try. Cyrus has earned a diploma in food production and likes to experiment with new dishes and techniques; whole Carlos has graduated in Commerce (Cost Accounting). The brothers owe their success to their father Carlos (Sr) who has supported them throughout this endeavour and to whom they often look to for advice and guidance. Their mother Michelle too, is a constant source of support and motivation.
Carlos and Cyrus always knew they wanted to expand their business and would often get inquiries about whether they made their own coffee. This sparked in them a desire to create a coffee brand of their own.
To start with, after production, Latin Quarter will sell a medium-dark roast single estate Arabica which will be available in bean and powder form at the café and eventually will be available in most stores in Goa within a month.
The process of making Goa’s latest coffee is very interesting. The green beans, sourced from India’s coffee capital, Coorg, are roasted in small lots to preserve all of their flavours. The coffee beans are dropped into a chamber heated to around one hundred and fifty degrees celsius and are taken out approximately twenty minutes later when they are roasted.
With notes from fruity to earthy to chocolaty, this coffee is ideal by itself or with milk and can be enjoyed any time of the day.
Carlos says that he is working on creating unique roasts of Arabica and Robusta which will appeal to all coffee lovers across Goa. Cyrus is working on a blend of Arabica and Robusta which will appeal especially to filter coffee lovers of Goa. The coffee is available in retail packs of two hundred and fifty grams. Institutional packs of five hundred grams and one-kilogram packs are available for sale to cafés The brothers are soliciting trade inquiries to market their brand.


“We chose the name Latin Quarter as it is the area in which our café is located. An old-world charm of colourful houses and narrow lanes. We are working on a blend of Robusta and Arabica which will be launched shortly,” says Cyrus.
Not only can coffee enthusiasts in Goa now get a chance to taste freshly roasted and ground coffee, but those interested in viewing the roasting process on their gas-operated roaster are also welcome to do so if it is on when they visit the café.
Caravela Café and Bistro has been consistently dishing out delectable fare whether it be all day English breakfasts, sandwiches, burgers, pizza and desserts. The coffee has always been a salient feature of this café and it is known to have introduced some of India’s finest coffees to Goa.
With the introduction of its very own line of coffee, Caravela Café and Bistro becomes the first café in Goa to do so.
In addition to the Café, Carlos also notes that there are rooms under the brand name of Caravela Homestay in the same premises and also Caravela’s service apartments at Candolim
